Blanc de Noirs is Champagne produced exclusively from black grape varieties—Pinot Noir, Pinot Meunier, or a blend of both—while avoiding skin contact during pressing to preserve the wine's white colour. Compared with Blanc de Blancs, Blanc de Noirs offers greater body, texture and structure, making it one of Champagne's most gastronomic styles.

The wines are characterised by ripe orchard fruit, yellow apple, pear, stone fruit and subtle red berry notes, supported by a broader palate and a creamy texture. Extended lees ageing adds layers of brioche, roasted nuts and spice, while the best examples retain the freshness and precision that define great Champagne.

Clandestin brings a unique perspective from the Côte des Bar, where Kimmeridgian limestone soils—more closely related to nearby Chablis than the chalk of the Côte des Blancs—produce Pinot Noir of striking energy and mineral tension. Their Austral and Boréal cuvées demonstrate how this southern part of Champagne is redefining Blanc de Noirs through low-intervention winemaking and a strong focus on terroir expression.
