Clandestin Austral 22 Blanc de Noirs is a slightly richer and more expressive counterpart to Boréal, showcasing the depth and ripeness of Pinot Noir from Côte des Bar. A great choice for those who enjoy a broader, yet still precise and mineral Champagne style.

Vineyard

Sourced from vineyards near Landreville. Soils are predominantly Kimmeridgian limestone (limestone and clay), similar to Chablis, contributing structure, salinity, and distinctive minerality.

Compared to “Boréal,” parcels for “Austral” often come from slightly warmer, more sun-exposed sites, giving a riper and more generous expression of Pinot Noir while maintaining freshness.

Farming follows organic/biodynamic principles with a strong focus on terroir.

Winery

Fermentation with native yeasts in neutral vessels (stainless steel and/or used oak) to preserve purity and site expression. No fining or filtration.

Aged on lees for an extended period, enhancing texture and complexity.

Dosage: 0 g/l (Brut Nature – no added sugar)

Nose / Palate

Nose: ripe red berries (strawberry, cherry), citrus zest, subtle spice, and light earthy notes.

Palate:

slightly broader and rounder than “Boréal”
vibrant but softer acidity
fine, creamy mousse
layers of red fruit, citrus, and saline minerality
long, textured, and expressive finish

Clandestin

Champagne Clandestin is a small, highly distinctive Champagne project founded by Benoît Doussot, a Burgundian outsider who brought a fresh perspective to the region. Launched in 2015-2016 without family vineyards, Clandestin works as a micro-négociant, sourcing organically farmed grapes from a network of growers in the Côte des Bar to highlight the untapped potential of this terroir.

Driven by a strong focus on site and exposition, each cuvée is built around specific parcels and soil types, often separating north- and south-facing vineyards to express their differences with precision. In the cellar, the approach is resolutely minimal - spontaneous fermentations, barrel ageing, and zero-dosage bottlings allow the wines to remain pure, textured, and transparent to their origin.

Production is small and highly focused, resulting in Champagnes that feel both experimental and deeply terroir-driven. Clandestin stands out as a modern, boundary-pushing voice in Champagne - combining Burgundian sensibility with the raw, mineral energy of the Aube.
