Description

Style:

A terroir-driven vintage Champagne, combining richness, texture, and mineral precision. Elegant and gastronomic, with a distinctive saline finish.

Vineyard:

Located in Trigny, in the Montagne de Reims. Produced from 80% Pinot Noir and 20% Chardonnay sourced from the Chevillevy, Jardin (planted in 2013), and Marisson (planted in 1978) parcels on clay and sandy soils. The estate is organically farmed.

Winery:

Fermented with indigenous yeasts and aged for one year in 2.2 hL French oak barrels. Bottled by hand, riddled manually, and disgorged in December 2023. Extra Brut (5 g/L dosage) with no fining or filtration.

Production:

Limited production of 930 bottles from the 2019 vintage.

Nose / Palate:

Ripe citrus, orchard fruit, brioche, and subtle oak notes. Rich and textured, with vibrant acidity, pronounced minerality, and a distinctive saline finish that reflects the wine's terroir.

Sylva Labs is a pioneering UK-based project rethinking non-alcoholic drinks through the lens of wood, time, and flavour. It was founded by Ben Branson, one of the key figures behind the global non-alcoholic movement and creator of Seedlip, widely regarded as the first distilled non-alcoholic spirit. 

With Sylva, Branson pushes even further - building an experimental distillery and maturation lab dedicated to exploring how wood, grain, and process can create depth and complexity without alcohol. Rather than removing alcohol, the drinks are constructed from the ground up using distillation, brewing, and innovative maturation techniques designed to extract flavour directly from different types of wood.

Produced in small batches, Sylva’s cuvées are layered, textural, and quietly radical - offering a new perspective on what refined, alcohol-free drinking can be, driven by curiosity, craftsmanship, and a founder known for reshaping the category.
