Dhondt-Grellet Le Bâteau Blanc de Blancs Grand Cru is a structured and expressive Champagne from the heart of Côte des Blancs, showcasing the depth, power, and minerality of Grand Cru Chardonnay. Ideal for those seeking a more complex and gastronomic style of Blanc de Blancs.

Vineyard

Sourced from top Grand Cru villages such as Cramant and Chouilly.

The soils are predominantly pure chalk, delivering intense minerality, precision, and tension. Vineyards are situated around 150–200 meters above sea level, benefiting from a cool continental climate that preserves freshness.

Low yields ensure high concentration and clarity of terroir expression.

Winery

Fermentation takes place mainly in stainless steel, with a significant portion aged in oak barrels, enhancing texture and complexity. A notable share of reserve wines is incorporated, contributing depth and consistency.

The wine is aged on lees for approximately 36 months or more, developing richness and fine autolytic character.

Dosage: around 2–3 g/l (Extra Brut style – very dry)

Nose / Palate

Nose: ripe citrus (lemon zest, grapefruit), white flowers, almond, and pronounced brioche and toasted notes.

Palate:

powerful yet precise
layered texture with creamy mousse
vibrant acidity balanced by depth
strong chalky minerality
long, complex, and structured finish

Dhondt-Grellet

Dhondt-Grellet is a small, family-run grower in the Côte des Blancs, now led by Adrien Dhondt, one of the most exciting voices of the new Champagne generation. Taking over at a young age, Adrien transformed the estate - farming around 6 hectares of Grand and Premier Cru vineyards - with a focus on living soils, organic and biodynamic principles, and meticulous parcel work.

Deeply inspired by Burgundy, his approach prioritizes ripeness, texture, and terroir expression, with nearly all wines fermented and aged in oak barrels using native yeasts and minimal intervention. Each cuvée is precise and site-driven, often highlighting individual plots from villages like Cramant and Cuis, resulting in wines that are both mineral and richly structured.

Production remains limited, and the style is unmistakable - pure, layered, and intensely vinous Champagnes that bridge the finesse of the Côte des Blancs with a deeper, more textural expression. Dhondt-Grellet stands as a benchmark for modern grower Champagne, combining craftsmanship, curiosity, and a strong sense of place.
