Style:
A fresh and elegant white Burgundy, focused on purity, balance, and drinkability. Light and precise, with a clean and approachable profile.

Vineyard:
Located in the Côte de Beaune , sourced from vineyards planted on limestone and clay soils. These terroirs provide freshness, balance, and a fine mineral character typical of Burgundy.

Winery:
Hand-harvested grapes, whole-bunch pressed and fermented with native yeasts. Aged in French oak barrels (mostly used) with lees contact, enhancing texture while preserving freshness and finesse.

Nose/Palate:

Citrus, green apple, white flowers, and light mineral notes on the nose, followed by a light to medium-bodied palate with bright acidity, a clean fresh profile, citrus and orchard fruit flavors, and a crisp, elegant, refreshing finish.

Camille & Guillaume Boillot is a small, emerging Burgundy estate founded in 2021 by Guillaume Boillot and his wife Camille, both deeply rooted in renowned winemaking families. Guillaume, son of Henri Boillot, and Camille, a fifth-generation vigneronne from Pommard, combine heritage with a fresh, independent vision of modern Burgundy. 

Working across prized vineyards in the Côte de Beaune - including Meursault, Puligny-Montrachet, and Pommard - the couple focuses on precision, balance, and terroir expression. Their approach in both vineyard and cellar is thoughtful and restrained, aiming to preserve purity while minimizing the impact of oak and intervention. 

Production remains small and highly allocated, with a clear emphasis on quality over quantity. The wines are elegant, mineral, and finely structured - representing a new generation of Burgundy that respects tradition while confidently forging its own path.
