Santorini is one of Greece’s most distinctive wine regions, shaped by volcanic soils, strong Aegean winds and an exceptionally dry Mediterranean climate. Its ancient vineyards are traditionally trained in low basket shapes known as kouloura, protecting the grapes from intense sunlight and powerful winds. The island’s sandy volcanic soils also allow many old vines to survive on their own roots, preserving a unique viticultural heritage.
Founded by Paris Sigalas, one of the pioneers of modern Greek wine, OENO P represents a new chapter in the exploration of Santorini’s exceptional terroir. The project focuses on limited-production wines made from carefully selected vineyard sites, with particular attention to the indigenous Assyrtiko grape. The wines reflect the natural connection between grape variety, volcanic soil and the demanding Aegean climate.
The estate combines traditional knowledge with a precise, low-intervention approach. Selected vineyards are vinified separately in large clay amphorae, where fermentation and extended lees ageing create texture, depth and complexity while preserving the grape’s natural acidity and mineral character. The resulting wines combine citrus and stone-fruit aromas with saline freshness, volcanic minerality and remarkable energy.
OENO P captures the essence of Santorini through old vines, indigenous grapes and amphora ageing — producing expressive, terroir-driven wines that unite Mediterranean concentration with vibrant acidity, volcanic minerality and impressive ageing potential. Through Gaspars Wine, these wines connect the ancient traditions of Santorini with a modern European approach to authentic, site-driven winemaking.
